Yep you better believe it healthy cheese on toast. I know cheese on toast. I have pinched this recipe from my amazing mother in law, the ultimate chief.
You will need:
2 slices of bread ideally granary or seeded, but if you like white then white is fine.
2 oz. or 50g grated low fat hard cheddar type cheese, grated
All the bellow chopped into 1/2cm2 chunks:
1 firm tomato
¼ red pepper
¼ yellow pepper
¼ orange pepper
1 mushroom, any type you like
black pepper, preferably fresh ground
¼ teaspoon dried basil,
What you need to do:
Put grill on med heat.
Put the bread under the grill and toast one side. Keep your eye on it.
Mix all the other ingredients together.
Turn the bread over so the toasted side is down and the bread side is up.
Pile the cheesy veg mix evenly over the two slices of toast. Ensuring you cover all the bread including the edges.
Place the toast back under the grill on a middle shelve for about 3-5mins and watch. Its done when the cheese is bubbling and the tops of the veg and cheese are going brown but not burning.
Serve with leafy salad or rocket
Why is this healthy?
- Lower in fat than regular cheese on toast because using low fat cheese and less of it because of all the veg but still getting the lovely flavour from the cheese as well as the calcium. Which is very important, especially for children, teenagers, pregnant and menopausal women, for bone health.
- Counts as part of your five a day as packed with colourful veg. which means its high in fibre and antioxidants. So great for your bowels, skin and general health.
- Balanced because it contains protein, from the cheese, veg from the peppers, toms, mushrooms and onions and starchy healthy slow release carbs form the seedy bread as well as some good Omega 3 if linseed bread. So carbs best source of energy to fuel your body and the comb of all these ingredients will keep you full and satisfied for longer.
So no food is bad for you. It’s all about how you adapt traditional recipes to make them healthier.
