This has to be the easiest and tastiest veggie main course and only has 2 ingredients. That’s right 2 ingredients.
You will need:
2 long sweet pointy peppers, you know the red ones, washed
200g feta cheese packet
What you need to do:
Cut the peppers along the length and remove all seeds and place on a baking sheet cut side up. So they look like little boats.
Put the oven on to 200 degrees Celsius
Take the feta cheese and divide into 4 equal pieces.
Take each piece of feta and crumble it with your fingers, roughly over one of the pepper boats evenly until the whole pepper is covered evenly.
Repeat the above for the remaining 3 pepper boats and place in the oven for 10-15 mins until the feta is slightly brown but not burnt.
While the peppers are cooking you could make some accompaniments with this veggie main course, like cous cous mixed with coriander and lemon juice or sweet potato wedges with piri piri salt sprinkled on them. They could go in just before the peppers as they will take 20 mins depending on how thick they are. Finished with a leafy salad.

- It contains veg which counts to one of your 5 or more aday.
- Red peppers are packed with antioxidants and fibre and are really pretty and colourful on the plate.
- The feta is a good source of calcium great for bone health.
As I was writing this recipe up my youngest daughter came down and looked what I was doing and said ‘oh I love that recipe Mummy.’ So it’s even child proof.
Go ahead and try this veggie main as current recommendations suggest we need to have more meat free days for health and to sustain the environment.
