Meat free Mondays! or any other day of the week for that matter!
Its all about #meatfreemondays. The idea is to encourage more fruit and veg in your diet. Aiming to reduce fats, increase your healthy vitamins like Vitamin c and fibre in our diet. It does have to be Monday, it can be any day of the week! Here are a couple of my recipes to help you along the way. Give them cheap jerseys nfl a go!
At least Ten Veg Lasagne

1 large aubergine, topped and tailed
I large courgette, topped and tailed
I med onion, peeled
Handful of baby corn (about 6)
Handful of green beans, topped and tailed
12 baby asparagus
Half a red pepper
Half a yellow pepper
1 med sweet potato
Handful of baby carrots or 1 large carrot, topped and tailed
6 baby broccoli
Whole clove of garlic peeled but not segmented, do not chop this just roast it whole.
Tin of beans i.e. kidney or what ever you have in your cupboard even baked beans will work.
